Almond Flour Chocolate Chip Cookies with Coconut and Pecans


Earlier this year I discovered Almond Flour and have been loving using it in recipes. You can even make it yourself by throwing a handful of almonds in a food processor and processing until it becomes flour consistency.

Ingredients:

  • 1 1/4 cups almond flour (or almond meal)
  • 1/4 cup dark chocolate chips
  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup pecans
  • 1 egg
  • 1/2 tsp baking powder (I used baking soda)
  • 1/4 tsp sea salt
  • 1/4 cup brown sugar (or substitute)
  • 3 tbsps coconut oil (melted)
  • 1 tsp vanilla
  • 1 tsp chia seeds (optional)
  1. In a large mixing bowl, stir together almond meal, choc chips, coconut, pecans, baking powder, salt and sugar.
  2. In a separate bowl, beat egg until uniform in colour and doubled in volume. 
  3. Whisk in the coconut oil and vanilla. Add chia seeds if desired. Add to dry ingredients and mix until combined. Chill in fridge for 30 minutes. Preheat oven to 375F. 
  4. Shape dough into balls and place on baking sheet. Flatten down slightly to form shape. Sprinkle a little bit of coconut and pecans on top of each.  
  5. Bake until edges begin to brown, about 7-10 minutes.  

Salmon with Blueberry BBQ Sauce


I came across this recipe on Pinterest by Caramel Potatoes and couldn't wait to try it. The best part of this dish is that it is SO quick to make and tastes amazing. I got this salmon from the local fish market and also cooked up some mashed sweet potatoes with this. The blueberry and bbq sauce works incredibly well with the salmon and can be used on many other things!

Ingredients:

  • 2 salmon fillets
  • 2 tbsps apple cider vinegar
  • 3 tbsps balsamic vinegar
  • 2 tbsps worcestershire sauce
  • 3 tbsps brown sugar
  • 2 tbsps maple syrup
  • 2 tsps lemon juice
  • 2/3 cup tomato sauce
  • 1 tsp onion powder
  • 1 tsp chopped garlic
  • 1/2 tsp dry mustard
  • 1/2 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp cinnamon
  • 1 cup fresh or frozen blueberries
Combine all ingredients (except blueberries) in a medium saucepan over medium heat. Whisk until combined and sugar is dissolved. Stir in blueberries and let simmer for 10 mins or until thickened. 

For Salmon, I grilled each side in a frying pan with olive oil until slightly browned. I then baked in oven until cooked through.

Roasted Sweet Potato Tacos with Orange Ginger Slaw


About a year ago, I watched the movie Forks Over Knives (see trailer here) when my friend Terri suggested it to me. The movie focuses on eating more of a plant-based diet and less processed foods and meats. It doesn't say to cut out meat completely, it just talks about the benefits of eating more vegetables, fruits, beans, nuts, etc. I found a recipe on Pinterest for Sweet Potato Tacos and thought it would be a good one to try for a vegetarian meal. The bonus is that I absolutely LOVE tacos. 

When we were making these back in Vancouver, we were making our own corn tortilla's from scratch. Our friend Amy bought us a tortilla press (you can get them off Amazon really cheap) and we loved making them ourselves. Since we haven't found somewhere close by to purchase Masa (corn meal), we have been buying them for now. 

The real name for the recipe didn't fit into the title, so below you will see what is involved. Feel free to modify as you see fit but I suggest you try this one out first :)
  1. Cumin Roasted Sweet Potatoes
  2. Orange Ginger Slaw
  3. Spicy Guacamole
  4. Mango/Mint Yogurt
  5. Corn Tortillas
You can make all of the above parts ahead of time. The only one that tastes better right before eating is the sweet potatoes. The rest can be done the day before or earlier in the day if you are having a dinner party!


Salivating yet? Here are the ingredients for each part of the tacos... 

Sweet Potato:
  • 1 large sweet potato, cubed into 1 inch pieces
  • 1 tsp cumin
  • 1 tsp olive oil
  • salt/pepper to taste
Toss sweet potato cubes in olive oil and lay on baking sheet and then sprinkle with cumin. Roast at 350F until tender. Season with salt and pepper if desired. 

Orange/Ginger Slaw:
  • 1 small red cabbage, diced finely
  • 1 large carrot (grated)
  • 1 tsp ginger (grated)
  • 1/2 cup green onions, chopped
  • 1 fresh lime, juiced
  • 1/2 fresh orange, juiced
  • 1/2 tsp fish sauce
  • 1/2 tsp palm sugar (or brown sugar)
Mix cabbage, carrot, ginger and green onions in large bowl until fully combined. In a small dish mix remaining ingredients for sauce. Coat the slaw with sauce and mix through. 

Spicy Guacamole:
  • 1 Avocado, mashed
  • 1/2 cup diced tomatoes (I like cherry tomatoes in guac)
  • Handful of cilantro
  • 1/2 fresh lime
  • 1-2 cloves of garlic
  • 1/2 tsp diced chili (if you like it hot) or chili flakes
  • Salt/pepper to taste
Add avocado into bowl and mash with a fork. Add remaining ingredients and mix. If you are storing in fridge for later, make sure to put cling wrap on top of guac so it touches it. This will help you avoid the brown crust of death. Sorry that was dramatic... but it does really suck when it goes brown. 

Mango/Mint Yogurt:
  • 1 cup natural Greek yogurt
  • 1/4 mango (about 1 slice)
  • 1/2 cup fresh mint, chopped
  • 1/2 fresh lime, juiced
  • 1 clove garlic
  • 1/4 cup cilantro
Add all ingredients to small bowl and mix through. I used a hand mixer blender thingie like this to get the right consistency. You can also throw into a blender but that's a bit messy. Chill in the fridge for at least an hour. It tastes the best when it is in fridge overnight. 

Corn Tortillas:
  • 10-12 corn tortillas
I bought these from grocery store and heated them up right before we ate.

Quinoa Breakfast Patties with Thyme & Garlic


Last weekend we took a road trip down the coast to a little town named Fingal. We spent a beautiful sunny morning at the beach, Nathan surfing and me running along the sand. After working up an appetite, we decided to hit up one of the charming little beach side cafe's on main street. I ordered an amazing meal of corn fritters and poached eggs. They were delicious... and when I saw quinoa patties on Pinterest the next day, I decided that I had to try them.

The base of these is quinoa, cauliflower, egg and almond flour. But you can substitute lots of different things in and they will still taste great! We had them with fried eggs and some drizzled balsamic vinaigrette. Let me know if you have any good additions to the recipe! Enjoy :)


Ingredients:
  • 1.5 cups of cooked quinoa
  • 1 cup of cooked cauliflower (chopped small)
  • 1/2 cup of almond flour (or breadcrumbs)
  • 1/2 cup of parmesean cheese
  • 1/2 cup green onions 
  • 2 teaspoons chopped fresh thyme 
  • 2 cloves garlic
  • 3 eggs (I used 2 egg whites and 1 full egg)
  • 1/2 teaspoon paprika
  • 2 tbsp coconut oil
  • salt & pepper to taste
  • Optional: serve with spinach, eggs, sprig of thyme and balsamic vinaigrette (see pic below)
Combine everything in large bowl. Add more almond flour/breadcrumbs if they aren't staying together properly. 

Heat non stick frying pan to med heat. Add 1 tsp of coconut oil. Add in patties and cook each side until golden brown.

Delicious & Healthy Chicken Meatballs with Apple BBQ Sauce


One of my guilty pleasures has always been meatballs. I LOVE spaghetti and meatballs, sweet and sour appy meatballs and nearly every kind you can get. The one big problem is that when you want to eat so many, you have to be careful of what is in them. The delicious melt-in-your-mouth meatballs from the Italian restaurant are probably beef and pork with lots of fillers like bread crumbs and oil. I once looked at a box of frozen meatballs and couldn't believe all the crap that went into them.


I decided to use a bunch of different recipes and make up my own. The best part about meatballs is that you can put pretty much anything in them. All you need to ensure if that the tastes go together and that they stick together as balls. I first got this idea from a vegetarian recipe for Bean/Walnut Balls that were really good! I adapted it with some ground chicken breast and loved the result. You can really substitute anything you want into this one!

I was excited these both came from my backyard! The chickens lay 1 egg/day & new veggie patch has basil!
For the ground chicken breast, I suggest going to the butcher and asking them to mince some fresh chicken breasts for you. This is easier and better than getting the frozen stuff from the grocery store. I didn't even know they did this until recently.

The minced chicken breast is under all this!
Chicken Meatball
Ingredients:

  • 500 g Ground Chicken Breast (or turkey)
  • 1 cup almond flour (instead of bread crumbs)
  • 1 cup grated carrots
  • 1 can kidney beans (mashed well)
  • 1/4 cup crushed walnuts
  • 1/2 cup fresh basil
  • 1 onion (diced really small, can cook ahead of time if you like)
  • 2 eggs
  • 1/4 cup sun-dried tomatoes
  • 2 tsp Chia seeds
  • 2 cloves of garlic (crushed)
ready for oven

The rest is easy! Pre-heat over to 350F. Add everything into a large bowl and hand mix. Roll into small balls and place on baking sheet in oven. Usually takes about 25-30 mins until cooked through. 



Apple BBQ Sauce
Ingredients:
  • 1-2 apples, peeled and cored
  • 1 can diced tomatoes
  • 1 onion
  • 1 tbsp coconut oil (or olive oil)
  • 2 cloves of garlic
  • 3 tbsp apple cider vinegar
  • 1/2 cup maple syrup
  • 1 tbsp dijon mustard
  • 1/4 cup water

Cook the apple in the oven for 30 minutes to soften. Brown the onion in the oil in a saucepan. Add in apple and cook until brown. Add in all over ingredients and simmer for 20 minutes. Use a hand blender to mix if you want it to be smooth or leave with apple chunks. 

If you don't want to make your own sauce, I like the Diana Honey Garlic BBQ Sauce (in Canada).

Thai Cashew Quinoa Salad with Ginger Peanut Dressing


So I'm absolutely addicted to quinoa right now... I know, I know, I'm a walking Vancouver cliche. (currently in Australia but started this obsession last year in Vancouver). I have found ways to incorporate it in almost every meal... with yogurt for breaky, with salad for lunch and with whatever I have left for dinner. Is there a harm in too much quinoa? I'm going to Google that right now.

Anyway, I found this recipe on Pinterest this week and had to try it. I love any Thai food, especially peanut sauce so this was a winner. I added a few extra things and I think they worked well. Let me know how it goes!

Ingredients
  • 2 cups cooked quinoa
  • 2 cups shredded red cabbage 
  • 1 red bell pepper, diced
  • 1 cup shredded carrots
  • ½ cup chopped cilantro
  • ¼ cup diced green onions
  • ½ cup cashew halves or peanuts (roasted is good)
  • 1 cup edamame (or frozen peas)
  • 1 cup chickpeas
  • Fresh lime, for a bit of tang


For the dressing:
  • ¼ cup natural peanut butter
  • 2 teaspoons freshly grated ginger
  • 3 tablespoon soy sauce
  • 1 tablespoon honey (or agave)
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon olive oil
  • Water to thin, if necessary




Instructions
  1. To make dressing: Add peanut butter and honey or agave to a medium microwave safe bowl; heat in microwave for 20 seconds. Add in ginger, soy sauce, vinegar, and both sesame and olive oil and stir until mixture is smooth and creamy. If you want a thinner dressing, simply stir in a teaspoon or two of water. I had to add a few teaspoons and then make more dressing also. You need to make sure you have enough dressing to cover all quinoa. 
  2. Put quinoa (must be cooled down) in large bowl. Add in dressing so it covers all quinoa and mix well. (have a taste to ensure you have enough dressing!)
  3. Next fold in red pepper, onion, cabbage, carrots, chickpeas, edamame, cilantro and any other veggies into the quinoa. 
  4. Garnish with cashews and green onions. Serve chilled or at room temperature with lime wedges if desired.

Sweet Potato & Curry Hummus




I'm currently "in-between" jobs in Australia and spending a great deal of time in the kitchen. We have been hitting up the farmer's markets and last week got a giant bag of sweet potato's for $2. (I should probably mention it was actually my boyfriend's parents who got them while we were at the beach... haha). So I went onto Pinterest earlier this week and searched for anything with sweet potatoes... I found lots of great stuff but I wanted something healthy so I chose to make the hummus.

There were tons of great recipes so I used a combination of a few of them. Hummus is great because you start with a can of chickpeas and then add pretty much anything you like! Garlic, lemon and tahini seem to be a good base with the chickpeas and then add anything else! I'm hoping to try a few more varieties next week too!



Ingredients

  • 1 can chickpeas (15oz)
  • 1 roasted sweet potato
  • 2-3 cloves of garlic (roasted)
  • 1 tablespoon of tahini
  • 1 tablespoon of fresh lemon juice
  • 1 teaspoon of olive oil
  • 1/4 cup of water
  • 1 teaspoon of curry powder (I used Madras Curry Powder)
  • dash of cayenne pepper
  • salt/pepper to taste
  • Crushed cashews for garnish


Directions:
  1. Preheat oven to 350F
  2. Place 1 sweet potato on cooking sheet and bake for 45 minutes or until tender. You can also roast the garlic at this time.
  3. Let sweet potato cool and then peel off skin and cut into pieces.
  4. Place all ingredients (except water) into food processor and mix on low.
  5. Slowly add the water a little bit at a time until it is the consistency you want.
  6. Add crushed cashews for garnish.
  7. Store in fridge for up to 5 days.

Quinoa Breaky Bites


I absolutely LOVE breakfast and absolutely HATE waking up early to cook it. This recipe is something that you can easily make on Sunday afternoon and keep in the fridge for the week. You can grab one on the way to work, heat it up or leave it as it. They would be great with a little salad for lunch or with some salsa for breakfast.

The best part about them is you can add whatever you have in the fridge! I love goats cheese so I add it in to whatever I can. The original recipe used mini muffin tins for the bites. I didn't have a mini muffin tin so I used a normal muffin tin. The only issue is that the bigger muffins don't stay together as well. I might try again when I purchase a mini tin. This recipe made 12 bites, but only about 8 stayed together well. 






Ingredients:
2 cups cooked quinoa (about 3/4 cup uncooked)
3 eggs
2 egg whites
1 cup zucchini, shredded
1 cup butternut squash, roasted
1/2 cup diced ham
1/4 cup cilantro, chopped
1/2 cup goat cheese, crumbled
1/2 cup red peppers, diced
1/4 cup caramalized onions
2 green onions, sliced
salt & pepper



Garnish: cilantro + cheddar cheese
Directions:
Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix to combine. Liberally spray a muffin tin with non-stick spray and spoon mixture to the top of each cup. Bake for 20-25 minutes, or until the edges of the cups are golden brown. Let cool for at least 5 minutes before removing from the muffin tin.

Chocolate Easter Nests


How cute are these???

My mom used to make chocolate clusters for the holidays every year. They were a huge hit with friends and family. So when I saw these cute Easter nests on Pinterest last year, I decided that I would make them for this Easter. This recipe is super easy and incredibly fast. I think the whole process took me about 20 minutes.

You can buy most of the ingredients at a bulk food store, which makes it very inexpensive.

Ingredients:

  • Dark chocolate chips and/or wafers
  • Butterscotch chips
  • Chow mein noodles
  • Mini Eggs or Eggies

Directions:
  1. Melt the dark chocolate chips with the butterscotch chips (either in microwave or double broiler) Use about 2:1 dark chocolate:butterscotch.
  2. Remove from heat
  3. Mix in chow mein noodles until covered
  4. Drop onto metal non stick baking sheet in small clusters
  5. Add 3 Mini Eggs to middle of each cluster
  6. Put baking sheet in fridge for 10-15 minutes
  7. Remove from fridge and they should pop off baking sheet easily
  8. Keep in fridge to maintain shape

Butternut Squash, Pecan, Spinach & Quinoa Bowl


So this is going to be my first post in a long seven months. I took a bit of a hiatus as Nathan was kindly 'asked to leave' Canada for a few months. He headed back to Australia and I joined him for an awesome vacation over the Holidays in December. He is now back here in Canada and I thought it was time to try a few fun new recipes.... So things turned out alright in the end (as I've heard they always do) and now it's time to move on and start some more food bloggin!

I found this recipe on Pinterest and decided right then and there that I had to try it ASAP. It is a pretty simple salad using roasted butternut squash, pecans, hummus and any veggies you have around. We added tofu since I had some in the house and thought it would be a nice addition. Not necessary though. Hope you enjoy!



Ingredients:

  • 1 cup quinoa
  • 1 tablespoon curry powder
  • 2 cups peeled, cubed butternut squash
  • 2 teaspoons olive oil
  • 1 teaspoon white sugar
  • 1/4 teaspoon cinnamon 
  • 1 bunch fresh cilantro
  • 1 cup cubed tofu (grilled)
  • 1 cup steamed spinach (or swiss chard or kale)
  • 1/4 cup roasted pecans
  • 1 cup hummus (homemade or store bought)

Directions
  1. Cook quinoa according to directions, using vegetable stock for half the water (optional) and adding 2 teaspoons curry and brown sugar to the pot before cooking
  2. Coat squash with olive oil, white sugar, cinnamon, 1 teaspoon curry and salt to taste. Roast in 400F oven for 30 min or until tender.
  3. Add squash, cilantro, tofu and spinach to the cooked quinoa and toss gently to combine. Top each bowl with pecans and hummus.

Pecan & Banana Pancakes with Cinnamon and Vanilla



So when I met Nathan back in 2004 in Australia, he would always make amazing banana pancakes for me. This was a year before the song came out by Jack Johnson called Banana Pancakes. The song talks about making banana pancakes when it raining outside and pretending that it's the weekend. This is very appropriate since we are having the coldest, rainiest June (nicknamed Junuary) in Vancouver in years! Feel free to play in the background while reading this post - click here. We also got to experience amazing Indonesian banana pancakes on our trip to Bali last year. They are much thinner over there, more like what we call crepes. Here is a photo of the ones we had in Bali at the cafe next to our apartment in Legian.




I decided to take the recipe a little further and add some special ingredients to make these pancakes more unique and delicious. I had some pecans laying around and I always have cinnamon and pure vanilla on hand for baking. They turned out amazing! 



  • 1 cup flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 teaspoon pure vanilla
  • 1/2 teaspoon cinnamon
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 2 ripe bananas, mashed (I saved one of them to go on top)
  • 1 cup of crushed pecans (I also saved some for the top)




  1. Combine flour, white sugar, baking powder, cinnamon and salt. In a separate bowl, mix together egg, milk, vanilla, vegetable oil and bananas.
  2. Stir flour mixture into banana mixture; batter will be slightly lumpy.
  3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

Nutella, Pecan and Candied Bacon Cookies



Well, this is it. All the things you love wrapped up in one cookie. Nutella is one of those things that I can't get enough of. I have been eating it since I was little and still can't stop. I found it challenging to actually get the Nutella into the cookie dough... but then I found a special trick! All you need to do is freeze little bits of Nutella on a cookie sheet before you make the cookies. Voila! Nutella chocolate chips.

I was going to just use normal bacon pieces in the cookies, but then my friend Ethan (tastesbetterwithfriends.com) suggested I make candied bacon. Wow, it tasted amazing... thanks for the tip!

Ingredients:
1 cup butter (softened)
1 cup white sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
3 cups four
1 tsp baking soda
1/2 tsp salt
2 cups Nutella chips
1 package of bacon
1 cup pecans



1. Drop small amounts of Nutella onto baking sheet and freeze for a few hours
2. Preheat oven to 325F. Cover each piece of bacon with brown sugar. Lay bacon on baking sheet in oven and bake for approx 20 minutes or until it is cooked through. Set aside to cool.
3. Preheat over to 350F
4. Cream together the butter, white sugar, brown sugar until smooth.
5. Beat in the eggs one at a time and then stir in the vanilla
6. Dissolve baking soda into hot water
7. Add to batter along with a dash of salt
8. Stir in flour, bacon and pecans (keep some out to add on top of each cookie if desired)
9. Stir in Nutella at end as it will melt quickly
10. Drop in large spoonfuls onto ungreased cookie sheet and bake for 10 minutes or until lightly browned.
