Chicken Pad Thai made with Spaghetti Squash



This is our first post in what is hopefully going to be one post a week for a year. We wanted to capture some of the dishes we are creating so our family and friends could have the recipes. Our hope is to make dishes that are unique, delicious and somewhat healthy.

The first dish is something that I found when I Googled "chicken" and "spaghetti squash". I absolutely love Pad Thai and this really seemed like something that could be amazing. The result was delicious.




Ingredients:
1 large spaghetti squash
1 cup bok choy (diced)
1 cup carrots (thinly sliced)
2 cooked chicken breast, chopped
1 clove garlic, minced
1/4 cup chicken broth
2 tbsp peanut butter
1 tbsp rice wine vinegar
1 1/2 tbsp soy sauce
1 red chili pepper

Garnishes:
2 tbsp dry roasted peanuts, chopped
green onions (chopped)
cilantro
lime wedges

Directions:
Cut spaghetti squash in half lengthwise. If you are having difficulty cutting it, try microwaving for a minute or two, whole. Scrape away the seeds. Place on foil covered cookie sheet and season with salt and pepper. Roast on 350 degrees for 40-60 minutes. Remove, let sit 5 minutes and then "shred" the squash with a fork.
In a large nonstick skillet coated with cooking spray, sauté garlic for 1 minute. Add the bok choy and carrots and sauté over medium-high heat for 3 minutes. Remove to a plate. Add chicken broth, peanut butter, soy sauce, rice vinegar and red chili pepper to skillet. Heat until smooth. Return veggies to the pan, as well as the spaghetti squash. Add in chicken, and heat over medium heat for 5 minutes or until sauce has coated all.
Divide among 2 plates/bowls and top with peanuts, cilantro, green onion, and lime wedge.

    2. I plan to tomorrow night... think I'll use veggie broth and skip the chicken. The tofu sounds like a good plan though and I even have some that I didn't have any plans for. ;)

  7. Great recipe - the sauce is divine! We used shrimp instead of chicken and I served with both squash and rice stick noodles. Will definitely be keeping this one in our rotation!

  10. WOW! I have a "healthy" pad Thai recipe that is usually my go-to. Not anymore. This blew it out of the water. My picky (when it comes to healthy food) boyfriend devoured this and asked for more. I used shrimp instead of chicken, but wow! Amazing find, thanks!

  12. I made this for dinner tonight...and it was AMAZING! My husband even had seconds. I did double the sauce though because it just wasn't enough to cover ALL the spaghetti squash AND chicken I had. Thank you for the recipe, I will be making this again!

  15. Loved this with a few changes. I cooked the chicken separately in a teaspoon of coconut oil for extra flavor. I also felt it needed more of a sweet/spicy flavor so I added 1 1/2 tablespoons brown sugar and a few tablespoons of sriachia. I also added 1/2 tsp. sesame oil and 1/2 chopped sweet onion. It was awesome!! Thanks for posting the recipe!

  20. Made this for my hubby tonight-- it was so good! I added a little bit extra peanut butter and soy sauce, as well as some broccoli and cauliflower (we like our veggies!), but everything was fantastic. Thanks for a great recipe!

  25. Thanks for sharing. Even the visual of your recipe attracts me a lot, and I'm planning to cook it right away. I'll mostly like to cook the authentic Pad Thai recipes because it's one of my favorite. I'll always look for the best pad Thai recipes online and prepare it by myself. Now I believe that I've discovered yet another excellent Pad Thai recipe. I hope to see more recipes like this from you in the future.

  26. You can also cut your squash in half, and put it in a casserole dish in the microwave to cut down on time. Put the squash in the dish face down, and add about an inch of water to the dish. It will only take about 10-15mins depending on microwave strength. Love this recipe, can’t wait to try.Joseph Donahue
